Production settings

Hi,
I would like to move my development into production step by step. The first batch of devices will be flashed in my office.
I need to know how I can have multiple environments for my development and production.
For example, I would like to use secure bootloader, disable JTAG and BASIC for production, but not for development.
Is there any way to achieve this?
