After finding the I2C Tools sample code in the ESP-IDF examples folder, I figured that would be such a handy little tool that I should make a project out of it.
I've put together a PCB that can be loaded directly with the example code to create a super handy I2C debugger. I did however make a small change to the source to automatically run the i2cdetect command when a button is pressed.
